In a saucepan over medium high heat, combine the heavy whipping cream and ⅔ of the white chocolate. Stir occasionally until the chocolate is melted.
Add cake mix and pink food coloring. Mix well to combine and add watermelon flavoring oil. Remove from heat. Allow to cool to the touch.
Pour in the graham cracker crumbs and chocolate chips and fold in with a spatula.
With your hands scoop the dough and, using your palms, roll it into a ball. Place truffle balls onto a lined plate.
Refrigerate for 30 minutes.
