These no-bake chocolate peanut butter truffles are one of my favorite "candy" recipes to make and share. Not only are they super simple to prepare, everyone loves them. Plus, you can make these any time of year to share or just eat as a special treat all for yourself!

Chocolate Peanut Butter Cup Truffles
If you've ever had a peanut butter cup, then you already know what these taste like. They are in essence, a peanut butter cup but in a fun little ball instead. The benefit of this is that you get a bit more of that peanut butter filling that you love with just enough chocolate on the outside.
A truffle is simply a soft flavored center formed into a ball and dipped into chocolate or dusted in a sweetened coating. They range from this thicker peanut butter mixture to a more liquid center with a chocolate and cocoa exterior. You can find truffles in many different flavors made from cake mix all the way to gourmet chocolates. This just happens to be one of my favorites and is super easy to make!
Choosing the Right Chocolate for Truffles
While you can use any chocolate you want to dip these into, after years of experience with candy making, I have to suggest choosing quality chocolate every time. When chocolate melts, it can harden again with a different color and texture. Higher quality chocolates are going to give you the consistency and the final result that you want.
Popular options you should be able to find in your grocery store are Godiva, Ghiradelli, and Baker's brands. These are all options you can find in the baking aisle at various price points. I don't recommend using chocolate bark or chocolate chips for this recipe as they do not have great results.

- Unsalted butter
- Chocolate

How to Make Peanut Butter Cup Truffles
Place parchment paper onto a platter, dish, or baking sheet and set aside.
In a medium bowl, beat the butter until softened.
Add in the peanut butter and vanilla extract and beat until smooth.
Next, add in the powdered sugar and mix until incorporated and a thick dough has formed.
Using clean hands, scoop and roll the mixture into 1" balls and place onto the prepared parchment paper.
In a small saucepan, over low heat, melt the chocolate and coconut oil together. Stir regularly until just melted, but be careful not to burn the chocolate.
Remove the chocolate from the heat, and then use a fork to lift the prepared peanut butter balls into the chocolate holding them above the chocolate to let the excess drip back down into the saucepan or bowl.
Place the dipped balls back onto the parchment paper and repeat until all peanut butter balls have been dipped in chocolate.
If desired, use excess chocolate to drizzle stripes or designs on the top of the truffles.

Because they look similar to the mushroom/fungus, truffle, the candy is referred to as a sweet truffle. A classic truffle will include chocolate and heavy cream, but many variations such as this go by the same name.
The popular Buckeye candy is made in the same way, with the exception of leaving one end without chocolate. This recipe can be used and called a buckeye simply be dipping only ¾ of the ball into the chocolate and leaving one end "open" to show the peanut butter filling.
The addition of coconut oil to the chocolate helps it to harden faster and often thicker giving you a better quality result.
Tips for Making Truffles
Use a small cookie scoop or melon baller to scoop the dough into even sizes before dipping.
If you have trouble dipping your peanut butter balls into the chocolate without them crumbling apart, freeze the balls for 30-minutes to 1-hour before they are dipped.
Use two forks to dip the balls into the chocolate so that one can hold it steady and the other moves it around to make sure all areas are coated.
Another option is to use toothpicks inserted into the balls to dunk them completely in chocolate then easily remove them once place onto the parchment paper.
