Peel the pineapple and cut it into thin slices.
Remove the center of the pineapple using a round mold.
Add a stick to each piece of the pineapple.
Melt the chocolate over boiling water, stirring in the coconut oil.
When the chocolate is melted, dip each pineapple in the chocolate covering half of the piece with chocolate.
Place it on a pan lined with baking paper and repeat the same procedure with all the slices.
Add some sprinkles over the chocolate while it is still soft so they can stick on it.

- You could use fresh or canned pineapple slices- it all depends on your personal preference. Just remember that the pineapple slices need to be dry before you dip them in the chocolate. If they are watery, you can pat them dry with paper towels, freeze them for a few minutes, and then dunk them in the chocolate.
- If you’re not too keen on using whole pineapple slices, you can chop the pineapple into 2-3 inch segments and then follow the same process.
- Want your pineapple pops to look fancier? Top them with a drizzle of melted white chocolate and refrigerate for a few minutes before you serve.
- While this recipe calls for the pineapple slices to be only half dunked in the chocolate, you could obviously melt more chocolate and dip the whole pineapple slices into the chocolate too.
