Ingredients For the Toffee
You’ll need just 6 simple ingredients to make the no-bake English toffee.
- 1 cup butter
- 1 cup sugar
- ½ teaspoon vanilla
- ¼ teaspoon salt
- ¾ cup almonds
- ¾ cup chocolate chips
How to Make the No-Bake English Toffee
Once you have all the ingredients ready, here’s what you need to do to get the recipe right.
Add the butter, sugar, vanilla, and salt to a pot at a low temperature.
Stir with a spoon and cook until you get a thick mixture looking like caramel.
On a big dish lined with parchment paper, add the chopped almonds.
Cover the almonds with the caramel mixture.
Chop the chocolate into small pieces or use chocolate chips and add it right after the caramel so the chocolate can melt.
When it starts melting just go over it with a spoon or knife to smooth the top.
Leave it in a fridge for 15-20 minutes then break it into small pieces and serve it.
Traditionally, English toffee does not have any nuts or add-ons to it. You can, however, experiment and try on different additions based on your personal preference. Nuts, chocolate sprinkles, roasted seeds, and desiccated coconut are all excellent choices.
Almonds are great, but if there’s another specific nut that you prefer, you could totally use that instead of the almonds. Walnuts, pistachios, and pecans are some excellent choices you could opt for.
If you’re an amateur when it comes to making toffee, you might be worried about getting the mixture to have the right, smooth and silky consistency. Truth is, a lot of newbie toffee makers end up getting their toffee mixture grainy. On the plus side, there’s actually a nice little trick that you can implement to keep that from happening.
Rub the inside of the pot or pan or whatever you are using to cook the toffee with some butter. Make sure you place the sugar on the inside of the pan and try to keep it from getting to the sides. Once the sugar has started to melt, place a lid on the top of the pan and allow it to simmer for a few minutes until all the crystals have dissolved and there are no stray crystals left behind.
Chocolate can start to separate from the original caramel toffee layer once that hardens. A good way to keep that from happening is to use chopped-up cooking chocolate instead of chocolate chips. This is because often, chocolate chips have a sticky, non-melting layer to them that makes them pull away from the toffee layer easily, which cooking chocolate doesn’t have.
Your leftover no-bake English candy can be stored in an airtight container at room temperature for up to 2 weeks- if they last that long that is!
You can also choose to freeze the toffee, but it won’t have the same texture and crunch factor to it after it is thawed.
Tips & Tricks to Make the No-Bake English Toffee
Ready to give the recipe a shot? Wait up! Keep these little tips and tricks in mind to nail the recipe.
- Still worried about getting your toffee mixture grainy? Add a tablespoon of corn syrup into the mixture, and you’ll end up with that perfect smooth mixture that you want to achieve.
- To balance out the sweetness of the toffee, you could use dark chocolate instead of your regular milk chocolate. It has an incredibly intense flavor that will make your no-bake English toffee even more tempting.
- Make sure you always use a heavy-bottomed, nonstick pan to make the toffee.
- If you have a candy thermometer, make sure you use it for this recipe. Getting the caramel mixture to the hard crack stage is super important if you plan to get your candy mixture to have the right texture and crunchiness to it.
- If the color of the caramel doesn’t seem dark enough, allow it to continue to simmer on low heat.
- Always use the best quality butter you can get your hands on to make this toffee. You’ll be surprised at how much of a difference it can really make. Using low-quality, cheaper varieties basically means you’ll be adding water into the mixture, which can ruin the integrity of your candy.
- You can also swap the chocolate layer with the almond layer, and let the chocolate layer go on first, followed by the chopped almonds right on top. To make sure all the layers are set well in place on top of the buttery toffee, you can gently press on them with the palms of your hands (covered in cling wrap to minimize the mess).
- You can also choose to melt the chocolate separately and then layer the melted chocolate on top of the toffee layer to get that smooth, even consistency and thickness of both layers. This may take a few extra minutes but will ensure that your toffee has the perfect look and taste to it.
