INGREDIENTS: For the crust: – 2 cups (200g) graham cracker crumbs – 6 tablespoon (88.7ml) melted butter – ¼ cup (25g) confectioners sugar For the filling: – 16 fl. oz (2 cups) (473ml) whipped topping – 2 cups (450g) cream cheese – 1 cup (136g) cake mix – ¾ cup (75g) confectioners sugar – ¼ cup (50g) bright sprinkles – 1 teaspoon (5ml) vanilla extract
To make the crust, in a medium-sized bowl, combine the graham cracker crumbs, the melted butter, and confectioners sugar. Stir the mixture until well combined. Press the mixture firmly into the bottom of a springform cake pan. Place the cake pan into the fridge to allow the crust to set.
To make the filling, with a hand mixer, whip the cream cheese until smooth. Combine the whipped topping and cream cheese in a large bowl, mixing until well combined.
Add the cake mix, confectioners sugar, half of the bright sprinkles and the vanilla extract to the cream cheese mixture and stir together until well incorporated.
Spoon the cream cheese mixture over the crust in the cake pan, smoothing the top of the filling to make it neat and tidy.
Decorate with the remaining sprinkles and additional whipped topping, if desired.
Place the cheesecake in the fridge for at least 2 hours or more, until ready to serve.
