PREP TIME: 10 Minutes CHILL TIME: 4 Hours
INGREDIENTS: –– ½ cup cake mix – 2 cups whipping topping – 1 cup cream cheese – ¾ cup confectioners sugar – 2-3 tablespoon rainbow sprinkles + more for decor – 1 teaspoon vanilla extract
In a large bowl, combine the cream cheese, sugar and vanilla extract. Cream these together with an electric mixer. Add the whipped heavy cream and mix well. Then add cake mix and mix until well combined.
Stir in half of the rainbow sprinkles and fold them in. Do not over mix or the sprinkles will start to run and discolor everything. Pour the mixture into a parchment-lined baking pan, spreading it into an even layer.
Top with the other half of the rainbow sprinkles.
Freeze for at least 4 hours or until completely firm. Cut into ½ inch squares and insert popsicle sticks, then serve.
