One of my favorite foods in the whole world, cookie dough ice cream is a simple and quick recipe for fantastic treat!
PREP TIME: 20 Minutes CHILL TIME: 1 Hour
INGREDIENTS: For the dough : – 1 cup butter – 1 cup sugar – 2 tablespoon vanilla – 1 ¼ cup flour – 2 fl. oz ( ¼ cup ) milk – Pinch of salt – 1 cup chocolate chip For the ice cream: – 3 cups cold heavy cream – 1 ⅓ cup sweetened condensed milk – 1 teaspoon vanilla
Make the dough: Place the flour into a glass dish and microwave it for about 1 minute and 15 seconds, stirring at every 15-second increment. Allow the flour cool completely before use. In a deep bowl, using an electric hand mixer, cream together the butter and sugar. Add vanilla, flour, milk and salt to the creamed butter. Stir the mixture again to fully incorporate all of the ingredients.
Fold-in the chocolate chips until they are distributed evenly throughout. Using your hands, make small balls of the mixture and freeze them for 30 minutes. While the cookie dough balls are in the fridge, make the ice cream.
Make the ice cream: In a large bowl, using a hand mixer, whip the cold heavy cream until soft peaks form. Add the sweetened condensed milk and vanilla, then stir to combine well.
Using a glass baking sheet, pour half of the cream mixture in the dish, then add half of the cookie dough balls. Repeat this procedure until you have used all of the ingredients.
Top with any remnant crumbled cookie dough and chocolate chips. Freeze for at least 1 hour before serving.
