No-Bake Snickers  Ice Cream Bars

One of the most fantastic treats you can make at home, this no-bake snickers ice cream bar recipe is so easy!

PREP TIME: 20 Minutes CHILL TIME: 1 Hour

INGREDIENTS: For the caramel : – 14 fl. oz coconut milk – ½ cup brown sugar – 1 tablespoon coconut oil – 2 teaspoon vanilla extract – Pinch of salt For the bars : – 5 medjool dates – 4 tablespoon water – 1 cup oat flour – ⅓ cup crushed peanuts – 1 cup vanilla ice cream For the glaze: – 2 cups dark chocolate – 2 tablespoon coconut oil

To make the caramel, combine the coconut milk and brown sugar in a small saucepan over medium heat. Stir constantly until the mixture thickens and browns, about 20-30 minutes. Remove from heat, then add the coconut oil, vanilla and salt. Stir until well incorporated.

Place the mixture into the fridge to chill for about 20 minutes to thicken, then place onto the counter until you're ready to use it. Place the medjool dates in boiling water for about 20 minutes to soften. Remove the dates from the boiling water and blend with 4 tablespoon of water. Add the oat flour and crushed peanuts to the blender and blend again until you create a loose dough. Press this mixture into a single layer in the bottom of a baking dish. Allow this base layer of peanut mixture to rest in the fridge for 10-15 minutes.

Allow the ice cream to rest on the counter for about 5-10 minutes to soften enough that you can spoon it easily. When the base layer is set, spoon the ice cream over the base layer and smooth it out neatly. Place the baking dish into the freezer for about 20 minutes to firm up. Remove the baking dish from the freezer when the ice cream is set. Add the caramel layer on top of the ice cream, then return the baking dish back in the freezer for about 10 minutes to firm up.

Melt the dark chocolate and coconut oil together in a small dish. Remove the baking dish from the freezer and carefully cut the layered dessert into bars about 1 inch wide. Spoon the melted chocolate over each of the bars, coating as much of the bars as you can. Decorate with additional peanuts, if desired.

Place the bars in them in the freezer for about 10 minutes or until the chocolate sets. Serve frozen.
