S'mores cheesecake

Absolutely delicious to the tastebuds, this no-bake S'mores Cheesecake is a fantastic twist on the traditional no-bake cheesecake.

PREP TIME: 30 Minutes CHILL TIME: 2 Hours

INGREDIENTS: Crust    2 cups graham cracker crumbs    6 tbsp melted butter    ¼ cup powder sugar Filling    16 fl. oz (2 cups) whipped topping     2 cups cream cheese     1 cup marshmallow fluff     ¾ cup confectioners sugar     ¼ cup chocolate chips      1 tsp vanilla Marshmallow Fluff     ⅓ cup water     ¼ cup powder sugar     ¾ honey or corn syrup     3 egg whites     ½ tsp white vinegar     1 tsp vanilla

Place the graham cracker crumbs, melted butter and powdered sugar in a large bowl together. Mix together with a spoon and press into the bottom of a springform cake pan. Place in the fridge for 10-20 minutes to set.

Place water, sugar, vanilla extract, and corn syrup (or honey) in a medium saucepan over medium heat, stirring continuously until the sugar has dissolved. Remove this sugar syrup from heat to cool while you complete the next step. Using a hand mixer, whip the egg whites and white vinegar together on a medium-high setting until you get stiff peaks. Add the sugar syrup into the whipped eggs and continue to mix it with a hand mixer for about 3-4 minutes until well combined and very fluffy. Set aside to cool to room temperature while you make the filling.

Place the cream cheese in a medium bowl and cream with a hand mixer until soft. Add the whipped topping and cream together. Add powdered sugar, vanilla extract and half of the marshmallow fluff. Mix it together well. Spoon this mixture into the cake pan over the crust and place the cheesecake in the fridge while you prepare the chocolate.

In a medium bowl or pan, melt the chocolate chips. Once fully melted, stir until all of the lumps are completely gone. Spread the melted chocolate on top of the cheesecake and put it back in the fridge. Allow the cheesecake to chill in the fridge for at least 2 hours. Add the reserved half of the marshmallow fluff to the top of the cheesecake, forming it into peaks and valleys. Use a kitchen burner to toast the marshmallow fluff tips then serve!
