Chocolate Rum Truffles

Such a decadent and delicious treat - but these easy chocolate rum truffles only take a few minutes to make.

PREP TIME: 10 Minutes CHILL TIME: 1 Hour 30 Minutes

INGREDIENTS: Filling: – 1 cup cream cheese, room temperature – ½ cup cake mix – 1 cup white chocolate – 2-3 tbsp rainbow sprinkles

In a medium bowl, combine the cream cheese, cake mix and 2 tbsp rainbow sprinkles. Stir the ingredients together until the mixture is smooth and creamy. You may want to use an electric mixer, but a spoon will work well if the cream cheese is room temperature.

Place the mixture in the fridge for about 30 minutes to chill. Melt the white chocolate using your favorite method, stirring until it's shiny and smooth with no lumps.

Place each ball on a parchment paper covered baking sheet.

Remove the mixture from the fridge and, using your hands or a melon baller, make balls about 1/2-inch wide.

Dip each ball in the melted white chocolate, using a fork to rest the ball on, shaking off the excess chocolate before returning it to the baking sheet.

Before the chocolate sets, decorate the top of each ball with rainbow sprinkles. Place the baking sheet in the fridge for at least 1 hour before serving to set the chocolate. Serve chilled or room temperature.
