Sticky, crunchy, and oh-so-delicious! These no-bake snickers bars take just minutes to make, and are totally worth your time.
PREP TIME: 40 Minutes CHILL TIME: 30 Minutes
INGREDIENTS: – 14 oz coconut milk – ½ cup brown sugar – 1 tbsp coconut oil – 2 tsp vanilla extract – ¼ tsp salt – 5 pitted Medjool dates – 4-5 tbsp water – 1 cup oat flour – ⅓ cup raw peanuts – 2 cups dark chocolate – 1 tsp coconut oil
You need to prepare the caramel first and leave it to chill completely before you continue with creating the bars. On low heat add the coconut milk and the brown sugar to a pot and cook and stir constantly for about 20 minutes or until you get a thick caramel mixture. Take it off the heat and add the rest of the ingredients for the caramel. Mix everything well and leave it to chill for a few hours or overnight. Put the Medjool dates in boiling water to stay for around 20 minutes. Then take them off the water and place them in a food processor together with the 4 tbsp water.
Then add the flour and mix until you get a dough.
Mix them until you get a paste.
Place the dough in a mold as the first layer of the cake.
When this is set, add the caramel and crushed peanuts over the caramel.
Place the mold in a fridge for another 30 minutes. Meanwhile, melt the chocolate with coconut oil.
Cut the mixture from the mold into bars before you cover it with chocolate.
You can put the bars on a form, cover with chocolate and place them on a dish covered with baking paper.
Put them in a fridge again and serve when the chocolate is cold and everything is set.
There’s just something about those layers of caramel, crunchy peanuts, and chocolate that make these no-bake Snickers bars impossible to resist. And if you’re thinking they take a lot of time to make, you’re wrong!
