Macerated Berry Frozen Yogurt Bars

Trust me, these easy macerated berry frozen yogurt bars are super simple to make and they make a great to-go breakfast on a hot day!

PREP TIME: 20 Minutes CHILL TIME: 4 Hours

INGREDIENTS: – Crust Layer      ⅓ cup almond butter      2 tablespoon maple syrup      ½ tablespoon vanilla       1 cup oats       Pinch salt       1 tablespoon almond milk       2 tablespoon applesauce Macerated Berry Layer      1 cup berries      1 tablespoon maple syrup       1 tablespoon water – Yogurt Layer      1 cup plain greek yogurt      3 tablespoon maple syrup      1 teaspoon vanilla

Combine all the ingredients from the Crust Layer in a bowl and stir until well mixed. Line a cake pan with parchment paper then spoon the mixture onto it, pressing it down into a neat layer of crust. Place the cake pan in the fridge while you are creating the Macerated Berry Layer.

Place the berries in a small saucepan over medium heat. Use a spoon to gently soften the berries. Add the maple syrup and water while periodically stirring. Once the berries and syrup mixture begins to steam, remove from the heat.

Add the berry mixture as a second layer over the top of the crust in the cake pan. Smooth the top neatly, then place it in the freezer while you make the final layer.

To make the final layer, combine the greek yogurt and the remaining ingredients in a large bowl. Mix well with a spoon until all of the ingredients are incorporated.

Spoon the yogurt mixture over the berry layer then return the pan to the freezer. Leave it for at least 2 hours.

Cut the frozen treat into bars and serve it with some additional fresh berries.
