Lemon Icebox Pie

Summertime is the perfect time for delicious no-bake desserts like Lemon Icebox Pie!

PREP TIME: 15 Minutes CHILL TIME: 2 Hours

– 8 oz cream cheese, room temperature – 14 oz sweetened condensed milk – 1 teaspoon lemon zest – Juice of 2 lemons – 1 teaspoon vanilla – 9 inch prepared graham cracker crust

With an electric hand mixer, cream the cream cheese until it is soft.

Add the condensed milk, lemon zest, lemon juice and continue mixing until it is all well incorporated.

Place the pie in the fridge to set for at least 2 hours. Decorate with whipped cream and some lemon pieces on top then serve.

Spoon the mixture over the prepared graham cracker pie crust and smooth the top neatly.
