Chocolate Rum Truffles

Such a decadent and delicious treat - but these easy chocolate rum truffles only take a few minutes to make.

PREP TIME: 15 Minutes CHILL TIME: 1 Hour 20 Minutes

INGREDIENTS: Filling: – ½ cup unsalted butter – 9.3 oz semi sweet chocolate bars, melted – ¼ cup rum Coating: – 14.1 oz semi sweet chocolate melted – ¼ cup cocoa powder

In a large bowl cream the butter with an electric hand mixer until it is soft. Add the melted chocolate and mix until the ingredients are well combined.

Add the rum and mix until the rum is fully incorporated.

Place the balls on a parchment paper covered baking sheet in the fridge chill for an hour. Melt the chocolate for the coating and stir until smooth.

Place the mixture in the fridge to chill for about 10 minutes. Using an ice cream scoop or cookie scoop, make 25 balls of the truffle mixture, working fast so that they don't melt in your hands as you work.

Cover each truffle with chocolate using a spoon then place them back on the parchment paper covered baking sheet.
