CHOCOLATE OATMEAL PEANUT BUTTER CUPS

INGREDIENTS – Rolled oats – Chia seeds – Honey – Ground cinnamon – Vanilla extract – Salt – Chocolate – Coconut oil

In a bowl, combine oats, chia seeds, honey, cinnamon, salt, vanilla extract, and peanut butter and stir until a "dough" forms.

Put into a muffin tin by heaping tablespoon fulls and press down to form a "cup".

Over low heat, melt the chocolate and coconut oil, being careful not to burn the chocolate. 

Cover the top of each oatmeal peanut butter cup with chocolate then refrigerate to harden.
